Default How to change APN settings for new SIM

As we all know, the scarily-expensive Audi Connect plans are not worth, and thus I got a USMobile SIM with data only plan, as have been suggested by many in other forums/threads.
However, I never found out where to update the APN settings in order to use the new SIM instead of the ATT plans. There seems to be no option under Connection Manager to enable the SIM I inserted and change APN
Please help! Thanks

The third-party SIM approach is for the older generation MMI. Won't work in your car. The new MMI uses a built-in eSIM. The SIM slot is non-functional in US-spec cars. It can be activated with vagcom, but only for the Wifi hotspot. The Audi connect services require a license and an official subscription plan, otherwise it's a no-go.
