opinions on resonated vs. non-resonated cat-backs?

Subjective, but w/o resonators, expect drone
I work for an exhaust company but rather than try and sell your our kit, I'll step back and chime in subjectively.
Each of the tuners (Milltek, MagnaFlow, Supersprint and/or whomever else is/will be) making an exhaust for this car will tell you that each person must decide for themselves what "sounds right" and what's "too loud."
A non resonated system will be louder inside the car, ESPECIALLY at low rpm (usually around 1500-2000rpm) as you lug the motor under load, but only you can decide what's too loud.
Generally speaking, the non resonated system will make more power too, but this is not an absolute.
BUt you guys are doing it right...looking at dyno numbers, and then hearing a similarly equipped car in person. Honestly, that's the best way to do it.
