Is there a process by which I can put my itunes files onto an SD card that I can use in my car?

Correct. You can use iTunes to convert to MP3 though it is a bit cumbersome...
I am sure there are much easier/faster ways to do it. In iTunes, go to Preferences > Advanced > Importing and choose MP3 as the encoder. Go back to your library and select the music you want on your SD card and choose convert. A copy of the selected music will be created in MP3 format. Copy this to the SD card.

for protected files...ie music purchased off of itunes....this is a PITA
But it is how I did it. There is probably a better way...I burned the tunes I wanted onto a series of CDs...then copied them back into itunes as MP3 files.....then pulled those filed onto the SD card. It is the only way I could get the itunes downloaded songs to copy correctly.....
Still think we need a good Ipod connector for this system!!! one you can stuff right in the glove box, it charges, and lets you scroll right on the screen from the steering wheel.....

For protected ACC files I use WMAConvert
My wife has a bunch of songs downloaded to iTunes and wanted to transfer them over to her Garmin Nuvi GPS and MP3 player. I found WMAConvert which will do the job quite well, and purchased it for $14.90, which was a deal. It works perfectly. You select all of your protected songs and it will convert them batch. Took about 12 hours for about 500 songs.
As long as you are copying songs that you own, and intend to play them yourself, then it's quite legal.

http://www.wma-convert.com/</a
