any disadvantages to trimming fenders vs rolling them?

No, chop the lip right off. I have done it on both my B5 cars- no issues.
I just made sure to tape the whole lip with masking tape to protect the paint and go slowly. Keep a rag soaked in cold water handy to keep things cool.
Apply touchup paint afterwards. No issue here even after 3 northeast winters.
