which blocks should I log to fully characterize my current fueling setups?
for resolution's sake, it would be great if i only had to log 2 blocks at any one time.
im thinking injector duty cycle and a block that has O2 voltages. any other parameters i should log?

Those are probably the only ones you need.
If you have access to a wideband datalogger, you can drop out the O2 voltages and get more accurate data.
O2/AFR is really the most important. If you are upgrading injectors, the duty cycle/pulse width data is obviously going to change, so its not that relevant.

i am upgrading my injectors, but i want to get a baseline...
im doing the ol' larger injectors & lower fuel pressure "equivalent" setup.
so i want to be able to compare and contrast the two setups.
