At 25" with 235 S-03's, you probably will rub......
I have little doubt about this. I had 225 on an 8" wheel with a 5mm spacer. This is equivalent to a 235 tire in terms of geometry relative to the fender. I had some rubbing on hard cornering with MTM full suspension, 25.125" fender height. Since you have already ordered the wheels/tires, I would recommend setting to a more conservative ride height. At 25.5 to 25.75, you may get away with it. Like I said in a previous post, however, a 235 tire will give you little to no advantage given the awesome amount of grip already afforded by these tires in 225 width with quattro. If you can switch back to 225, do it. I know that you have asked this question before, and since you have already purchased the tires, you are looking for a positive confirmation of your choice, but the simple truth is that you do risk rubbing issues. Better to know ahead of time, even if it isn't what you want to hear.

I'm considering going with 235/40's because 225s look too narrow on an 8.5" wheel.
My ride height is around 25.75" and I'm a bit higher than djillusion. He doesn't have any rubbing, so I think I should be good as well.

The S-03 in 225 is as wide or wider than most 235 tires....
don't ask me why this is so, but it is so. While I agree that some 225's look stretched on an 8.5" wide wheel, the S-03's look just about perfect. Still, at your ride height, you'll probably be fine.

for as long as you go straight, it won't rub. However, turn in, and then have a bump in the curve, and the front wheel outside sidewall will hit the outside part of the fender lining, and if that is already gone, hit the fender itself.
