How low should I go on Ohlins before it affects the handling? Heard 25.5" is lowest recommended

Default read the manual that came with the Ohlins. It says the lowest you should go.
I'm at 25" all around. I think that's close to the min ride height.

No, and manual didn't mention anything about desired ride height

Default Yes is does - page 9 of the installation instructions
"We recommend that the distance between the center of the wheels and the bottom of the fender lip be 13.50 inches. Below 13.0 inches the suspension is operating too close to its maximum bump travel and handling can be negatively impacted."
