How would I check for the correct tire pressure for 235/35/19 tire?

With a tire gauge?
Or are you asking what's the correct pressure? For street, or track? There isn't just one correct pressure.
I'd run 40 psi at least. Less and you risk rim damage from potholes or other debris; much more than that and your ride will be too harsh. (Well, it would be for me -- maybe you like it that way!

Use a quality digital tire gauge, and do it when the car hasn't been driven for some time, like over
night. You should have a minimum of 37 or 38 lbs in each tire.

http://www.tirerack.com/tires/accessories/airgauges.html</a
