Thinking about jumping ship again. :( Who thinks I'd regret going to a G35 Coupe? (more)

With the G I'd do suspension and tires/wheels upon delivery ...
Exhaust next and maybe, *maybe*, an SC down the road.
I know I'd miss the big, fat, super-broad torque curve of my Stage II powerplant. Having nearly 375 lb ft on hand from 2k RPM is tough to give up. :-/

I don't know...
I don't think adding more power to the S is the solution, as it seems like you're pretty stuck on a new car.
But if you're looking at a G35 coupe, with wheels, tires, exhaust, and possibly a supercharger, you're well into used 996 territory. You could get one that's certified to 100K. Yeah, the wife would take some work to convince, but odds are you'll be happier with the P car for longer than you would with the G35. And when the time came to sell either car, I think you'll be pleasantly surprised at what the P car will fetch in contrast to what a used Infiniti is worth.
The G35 has always struck me as a nice car...but not necessarily one I would want to own.
One other option is a 2004 B6 S4. Apparently they are still sitting on dealer's lots right now, and can be had for low $40's. I would much rather get that over a G35 coupe.

I'm only 5'9", so no biggie up front ... but you're right, it super-sucks in back.
I was shocked how small the trunk is and how little headroom there is in the back seat. My 6 and 3 year-olds won't care though. ;-)
