Time for new tires and looking to go bigger. What size should I go with?

My ride height is approximately:
Front 25.25
Rear 25.58
I currently have Pzero Nero M+S, and they are such great tires I think i'm going to go with the same ones again because overall they are the best tires i've ever had. Unless someone can convince me otherwise;-) I wouldn't mind trying something different but but it has to be a HIGH performance all season tire or a summer tire that performs well in the cold as good or better.
Currently as pictured, I have 225/40/18 but they are just too thin and stretched on a 18x8.5 wheel for my tastes.
What size should I go with? I really don't want to worry about rubbing, I suppose if needed I could get the fenders rolled...
Also not sure what the ET is or if it matters, the wheels clear my 355mm's no problem...

I just put 235/40/18 GS-D3s on my wheels. Virtually no rubbing.
I never hear or feel it rub but I recently noticed the there are a little scuff marks in the inside of the front fender liner so it must rub in some extreme cases. I still would do it again though. Looks so much better than 225s and offers much more rim protection.
