Default when installing electric fan taking place of fan clutch, where do i
tap in for wiring to make the fan come on at 180 degrees or do i have to set up my own temp switch and relay set up?

You need an external fan controller.

What DAP said... alternatively, if you are conscience of your car, you can use a manual switch.
