No, I have the 1.8T, missed that you have the 3.0. My 2000 Jetta VR6 gets 27mpg+ on the highway under the same conditions, so I still think you'll see your gas mileage improve a point or two.
My 1.8T has really started to improve in past 700 miles or so. I had a steady 37mpg on the highway for a two jaunt on a flat highway doing 68mph on a 55mph highway.

Filled up with 93 oct after leaving a customer's plant. This was my average over 52 miles! I almost hit 35mpg avg, but I had a couple of stoplights that were really long and killed the average.

I'm still blown away by it, a little farther away and I would have hit 35mpg!
Damn stoplights on our "expressway" killed my chances of hitting 35 though.
I wonder what it will do with a BoostedTech CAI and Borla exhaust.
I still think you can hit 29mpg on the 3.0 for a 100 mi or longer trip.
