Three problems: Center info display fails or loses pixels, fuel gauge error, temp gauge error.
In addition the fuel sender(s) in the tank get corroded (ethanol in the gas?) and throw the readings off.
Check the fuel gauge against the miles to empty. For example if it says 50 miles to empty and the gauge says 1/2 full it's probably the gauge.
If they agree it is probably the sender.
There are several companies that can rebuild your cluster. Module-master is one.They have instructions on how to remove your cluster. Your cluster has the immobilizer code for your TT so it is better to repair than to replace. Replacing the cluster would mean a trip to the dealer.
If you intend to hang on to your TT, buy a VAG.com from Ross-tech (or borrow one). You can test all the gauges using VAG.com.
Having a bad temperature gauge is not a great idea as you could overheat the motor without knowing it.
The fuel sender(s) can be cleaned and re-installed. About 2 hours work and $20 of gasket seals.
Since you are apparently having multiple cluster problems that's where I would check first.
And FYI on every Audi I have ever owned running temp is 12 o'clock on the gauge. If it isn't gauge is off, temperature sensor or thermostat is bad.
Also upon starting my car this morning it says OK overtop of SERVICE on the center display. Everything seems fine and well will vag com tell me what that is about? And which model of it do i look into buying, sorry for sounding like a total idiot im just totally new to these and didnt do that much research before buying it other than the haldex issue, timing issue, and a little of the cluster.

SERVICE is a reminder for you to drop your wallet and car off at the Audi Dealer. It's a reminder by mileage or time to have routine maintenance done. You can reset it by pulling on the R/H stalk in the cluster and turning it (instructions in the owners manual). You can also use VAG.com to reset and change the parameters of the reminder.
My TT didn't come with a manual so I bought one on E-bay for $20. It's actually worth having and reading, some of the cluster displays are kind of strange.
