Warning Lights...
I just got my 2000 Audi TT and I was just curious about something. When I push the Left set/check (clock) button I get the #milesuntil maintenance, then the oil pressure symbol then the Engine coolant symbol the ((!))...
But the thing is... these warnings only come on when I push the button. Does this mean that I need to check the oil pressure and coolant? Why does it only flash when I push the button?

What you are doing is the "Check" function of the Set/Check button. When you press that with the ignition on, you cycle through the check symbols one after another. This checks that the display is functioning properly.
When you start the ignition you should see the "OK". IF there is a malfunction THEN one of the symbols you mentioned will flash instead of an "OK" along with a warning tone indicating what the problem is.
It's all in the manual.
