Will 17" x 8" with 235/45/17 on a A4 Avant quattro with OEM sports suspension work?

That's close- depends on the tire (more)
With a 35mm offset, I have 17x8 wheels with 225/45R17 tires. If you go to a 235, the tire will be taller, making the car slower to accelerate. If you're going to a 235, I'd consider 235/40R17. Of course, you will have to check on tire rub, because even with 225s, it's pretty close.
