Car stalls, tachometer bounces
Off and on for two months, the check engine light comes on, the car starts to stall or actually stalls, and the tachometer bounces (but it's stable if I go over 40 MPH). So far, the fuel injection has been cleaned, the gasket was replaced, and it's had the 90k mile service, but the problem is still there. Does anyone have any clue what this could be?

Re: it souinds kinda like your car is turning off real fast intermitantly...
Maybe try swapping ecu's with a local and see if problem still continues. Its rare but every once and a while the ECU can cause something like what is happening to you.

could be a bad coolant temp sensor
I had a bad one and had similar symptoms. Stall, bouncing tach, tach pinned at 3k rpms and check engine light. Like everyone else said, VAG it before you change 17 different parts.
If it is a bad coolant sensor, it's only $25 and it's a DIY job in 5 minutes.
