Default Warm.

If it sits overnight, run the engine for a minute or so to get it circulating a bit.

If the car was just driven, let it cool down to the point you won't scald yourself when removing the drain bolt.

I jog around the block a few times and wear a blanket or heavy coat.

Default Best to change the oil after the car has sat idle

for a while. Then most of the oil has drained down into the pan. Also, you won't burn yourself on that hot oil ;-)
