Just to confirm what year and engine are you attempting this on? If a 1.8T, basically you have to take all the things attached to the head off. Intake manifold, exhaust manifold, timing belt, coolant flange, valve cover etc off.
Drain the coolant by pulling the lower rad hose coolant temp sensor.
Start with the intake manifold and undo all the nuts and bolts holding it on. There is a bracket holding the manifold to the block. You don’t have to remove the manifold, just move it up and away from the head. I use bungee cords to keep it away.
Next on to the exhaust manifold. Remove the air-box and tubes surrounding the head to get access to the nuts. Undo all the nuts and remove the cat to turbo bolts. There is a brace on the turbo holding it to the block. You can undo the brace to block bolt from underneath the car. Pull the manifold and turbo away from the head. Do not remove turbo from manifold.
Move on to the timing belt. Put the car in service position and take the belt off.
Move on to the coolant flange. Take the pipe off the back and pull the hose off. Remove the heater core hose from the coolant flange.
Take the valve cover off and grab your #10 Polydrive and start taking the head off. The head should be ready to come off now so use a pry and look for a point to pry up to break the head from the block. I chose a point by the engine code stamp. Once you get the head moving, look for any places you forgot to disconnect.
Basically you are trying to remove everything attached to the head. Keep going until everything is removed. Make sure you have all your parts. Head gasket set, timing belt kit if you are going to do that, coolant flange.
