Just to eliminate a few things.. Did you use G12 when refilling the coolant?

Easy there, I wouldn't say EXTREMELY low-----that's the OVERFLOW tank.

Sure, he's below the desired level in the overflow tank, but it's not like his engine is going to meltdown at any minute :-)
