Yes, but you are not jacking the full weight of a car when you lift one side...
I talked to a mechanic who regularly jacks an Explorer with a one ton jack...sure i wouldn't do it all the time, but once you jack up, the jackstands support the weight of the vehicle. If just jacking one side (like for tires) the jack is holding even less of the weight.
For instance, my Miata weighs ~2400lb. To lift the rear on a Miata you put the jack under the rear diff housing (jack point) and just jack her up.
For basic stuff, no need for overkill. I have kept my Miata jacked for 3 hours at a time with stands in position with no issues.
