not that anybody does this but. Does anybody know what plug turns off the oddometer?

For any reason it's a big fat F-E-L-O-N-Y you know engine and tranny aren't the only
expensive wear items, try suspension components, CV Joints, The chassis itself...all these things wear with mileage. The whole point of the odometer is to give a picture of the cars use as a total system. If it has a new engine...fine just say so when you sell it. I would not be surprised if somewhere in the ECU the mileage is stored...or elsewhere in the car.
Heck if you're going to do that you might as well just buy a new cluster...if you have a VAG you can push the milage to whatever number you want...but you can only go up not down.

You can roll the mileage forward as much as you like
you need a special VAG tool sequence to get into that part of the cluster...then you enter the mileage in kM. You can bump it forward not back. All odometers come from the factory Zeroed.
