Default suitable tire upgrade

My '01 Quattro/Sport 1.8T has 38k miles and I got a nail in my rear tire (too close to sidewall to fix). So now I'm thinking of just replacing the whole set (stock were Goodyear Eagle Touring 205/55/16). One of them got damaged a long time ago and the stock tire was discontinued so they put one Dunlop SP8000 on because it had a similar tread pattern and rating. I could do the whole set with new SP800's, but I'd like to know what my options would be. I don't mind a _slightly_ rougher/louder ride, but when I've autocrossed a few times on my stock tires, the understeer is pretty bad and the car slides around so I'd like some stiffer tires. But I'm a novice autocrosser so I don't want to go nuts.
Will Michelin Pilot Sports or XGTH4s perform better than the SP8000's? A few people have mentioned Yokohama ES100 or A008R and also Kumho ECSTA Spura 712s? How do these rank against each other?

Whoever 'matched up' three Goodyear Eagle Touring tires with a Dunlop SP8000 ought to be retired.
