Short answer, ya, you can get a 1.8T faster than a 3.0, but chips haven't come out yet. Plus there are warranty and longevity concerns when chipping.
The 3.0 also comes w/ wood trim and power seats, plus has leather as an option.

A stage one upgrade to the 1.8T would yield performance pretty much equal to the 3.0.
This upgrade will cost you roughly $400. So if perfomance is your goal then yes a chipped 1.8T is a better value. However, if you want performance from the factory (no warranty issue) with some luxury features like leather and power seats then 3.0 is the way to go.

Drive both. Buy 1.8t....
Over time, both cars will age. Do you want to pay $12,000 more for a car when the doors will ding and the paint will chip just as easy? You could buy an '02 1.8t and drive it 2-3 years and trade it for newer car with the extra 12-13 Gs. 2005? Do you need a $2,000 NAV system? My little GPS cost $100. Many other examples too like leather... I know I would rather a 2005.

Depends if you like 6 cylinders or 4 cyl turbo.
Acceleration is probably very close. So it probably boils down to a matter of personal preference. Do you want a smooth quiet V-6, or a spirited turbo 4 cyl with slight turbo lag? Each has its good points and bad points.
