Engine overheating
I have an issue of my engine overheating that is a bit puzzling. I have no leaks, coolant is still topped off in the reservoir and the cooling fans both operate. I’m not sure if the fans just aren’t running fast enough or what. When I drive normally with A/C off, it’ll start overheating after the engine is at normal running temp. But if I blow heat out then it’ll quickly go back down to normal temp. I’m thinking it may be a cooling fan module but I’m not an expert on this. Does anyone have any ideas for this problem?

You would seem to have some kind of coolant system issue then. My car has no problem staying at 90C (center) even in the summer. Mine is an 09 2.0T.
Just because there's no MIL doesn't mean DTCs aren't set. Though without a MIL, it would seem unlikely you'll have an engine related DTC. Still worth scanning for.
Beyond that, you'll need to start looking into coolant system efficiency/consistency issues. I don't have any idea of a problem isolation plan for that.
Happens randomly, or can you isolate the scenario that causes it to start going high? Are you modified in any way such that everyone else's normal operation may not be normal for you?

Fans run at different controlled speeds, so there could be a code for high speed circuit maybe?
In these cases, the thermostat is a likely suspect, and it won't throw a code, I don't think.

So I’ve gotten the car diagnosed and the cause of the issue is a stuck thermostat. With that being said, the few shops I’ve called around to have fix it are quoting me between $900 and $1000 roughly. I feel like I’m being hosed for what they’re charging. Is it a difficult task to do myself? I’ve got a water pump assembly coming in today and may just go at it myself if the job isn’t too hard. Only jobs I’ve done on my car is plugs and coils along with installing a cold air intake.

Not particularly hard, but still an involved task. If you're familiar with doing engine work, you'll be fine. If you expect it to be like replacing a battery, ....
There's a lot of resources out there on AW and AZ regarding water pump DIYs, as well on youtube no doubt.
I would remove the intake manifold just for the ease of clearance, but others have said it can be done without doing so.
Keep in mind removing the intake manifold risks unseating the injectors. If so, the seals must be redone.
