I bought a pair of chrome side mirror housing covers for my 2008 A6. They are not the cheap stick-on type - it's a direct replacement. These are just the mirror housing caps, not the entire side mirror assembly.

How do I remove my the old side mirror housing covers and replace with these replacement covers? Is it as easy as popping the mirror off and removing a few screws? Or does it involve taking apart the door panel?

If the new mirror housing is just the housing w/o the glass or the electrical motor, you can R&R the existing housing by popping the mirror, and removing the housing. If I remember correctly when I replace my passenger side housing, there is one or two screws you unscrew to remove the housing.
