I've noticed that from a cold start, the engine idles a little higher for about 20 seconds, then noticeably drops below 2000rpm (3.2, btw). I usually wait for the drop before going.

I believe the general rule is to not undergo full or aggressive acceleration....
until the temperature guage moves into the normal operating range. The old C5's had an oil temperature guage which was a great help.
