Finally got that bolt free
After drilling out the center of it, I bought a 3/8" cold chisel (but had to grind it down, 1/4" probably would have been better) and managed to eventually drive/cut/twist the remainder of the bolt free.
Broke my screw jack in the process, though
I'm about to go back out and see how much more trouble I can get into with the CV joint once it cools off a bit.
