What offset do we need on 18x8 wheels to clear the big brakes on the S?

Depends on the wheels
The five spoke stock A8 wheels (ET48) clear the front brakes according to skiracer1313.
I would say anything ET40 or lower should do it but you'd have to try each wheel. If the spokes protrude to the inside, you might need more offset. However, I bet it is doubtful. Almost all 18" wheels would probably work.

Yes, I can confirm 17" OEM D2 wheels w/ ET48 fit the S8 and clear the front brakes
and the upside to -1 sizing is there is a much broader selection of 17" snow tires than 18". I got mine for $300/set and they are like new.

S8 6-spoke 18"8J wheel=ET48 and that goes fine. The RS4 9-spoke 18"8J wheel needs ET42 for clearance
So it depens strongly on the wheel and how the spokes are formed (how they protrude etc.).
You question will therefore not have a universal answer. It all depends on the wheel.
