Starting in second isn't nearly as bad for an automatic transmission as it would be for a stick, automatics uses a torque converter to transmit power to the transmission rather than a clutch plate. Many new automatics often start out in second gear as a default unless you put them in a sport mode or mash the throttle from a stop. This is done for smoother acceleration and better fuel economy.

My understanding is that the Audi dual-clutch transmission does not use a torque converter.

Only the A5 has a dual clutch or DSG transmission. The S5 has a ZF8 speed transmission which uses a torque converter.

I have an A5, but now I do vaguely remember that the others do not..

When in D my car does not show what gear its in. it just says "D"

Is there any way to change that?

You can code it using an OBD11 device. I believe there is a one-click "app" to enable this feature via the OBD11 app for a few credits or if you get the Pro license you can manually code this feature along with a lot of other things by referencing the below thread without needing credits.

Yes, all the time. I spent a pretty significant amount of time watching it and taking note when we were all discussing transmission "lag" which I found to be mostly aggressively high gear selection in D
