Why can't I do many things while the car is in motion?

I haven't had a problem with any of the locks that Audi implements and Audi's system is certainly less aggressive at limiting functions while driving than that of Lexus.

in the early days, there was some aftermarket devices that can bypass these lockout for some makes and models. Recently. Manufacturers are making it harder and harder to bypass these lockouts. I usually use waze or google map if i am on a long trip, my passenger can navigate the phone or i can talk into it. I somewhat agree with what someone said earlier, the manufacturers should use the weight sensor in the passenger seat to determine if there is a passenger that can operate the lockout functions. On the flip side, having a passenger onboard also enable the driver to use the lockout function as well.

Distraction due to tech can and does kill - it's as simple as that. A recent case in our state in Australia saw a retiree with a spotless criminal and driving record sentenced to jail time after his distraction by a sat-nav screen resulted in the death of a person in the car he hit.
Imagine for a moment your world turning upside down in a second - not only are you facing finding out what it's like to be incarcerated (something you never contemplated in your 60 + years of existence), but you also have to realise you've killed someone - scary, isn't it?
To the OP, I suggest you think twice before resorting to the phone to do things Audi has wisely decided shouldn't be attempted while driving. It's illegal where I live to use a hand-held phone for any purpose while driving and a growing understanding of the dangers of distracted driving is resulting in increasingly vigilant monitoring and stringent enforcement of that.
For once, I'm 100% on the side law enforcement and I'm becoming increasingly concerned that the new tech that I find fascinatingly appealing has a sinister downside. For that reason, I'm personally anti Audi's move towards touch screens, which IMHO require more visual concentration away from the road than the MMI controller.

My last accident was being rear-ended at a traffic light by a teenage driver who “thought the light turned green out of the corner of my eye” because she was texting!
New Jersey passed a law many years ago making it a violation to be using a hand-held device while driving. I have NEVER heard or seen that law enforced yet I continue to see drivers (guessing mostly below-30) texting and talking on their cell-phones.
I know — I’m a senior citizen, but young (and really old) drivers scare the crap out of me.

Put the phone down please while driving and pull over if you really need to check your text messages. Take the hint and don't fiddle with the Infotainment system. Use voice command if you need to enter a navigation destination or do it ahead of time.

My point is why can I still zoom in on the map, but just not pan? Why can I write the address using the short form but not the long form? Why can I still check certain text messages but not others? If the goal is to reduce distracted driving then Audi should have disabled ALL non-voice features. It is so haphazardly implemented it's easier for me to input addresses on Waze on my phone than to use the built-in nav system. I don't write text while driving for your reference, I'm speaking mostly of the NAV limitation here.
