Will a 235/45R17 running on a 17 x 7.5 with an offset of ET35 work on a 4.2?

you will need to run longer lug bolts that will be under more strain
that said many run spacers <20mm without any problems.
one other issue area is that the allroad's stock tires are 225/55-17's. your 235/45-17s will be smaller so your speedometer and odometer will both be off by about 5% as calculated on the tire size calculator.

http://www.miata.net/garage/tirecalc.html</a

Longer lug bolts won't be under any more strain.....
....if you run the proper type of spacer (hubcentric). And running a non-hubcentric spacer at that size would be, well, stupid.
Saying that longer bolts are under more strain is like saying longer wheel studs have more strain.
