How come Subaru can offer the Brembo brakes on their cars and Audi can't?

Never said Brembos sucked. I said Ferrari brakes were not the greatest when compared to other...
High performance cars in its category and that was on older models.
Brembo one of the top three brake manufacturers in the world (for race application), does make excellent brakes. However it is not Brembo that decides what a car manufacturer installs on their car but the car manufacturer.
Also the Porsche mono block aluminium calipers were IIRC designed and tested in collaboration with Brembo and I believe Porsche hold their patents. Brembo may now be able to use that design in their own high performance brake system offerings. I don't know what Porsche and Brembo agreed upon when they designed the mono blocks.
Porsche builds cars and is not into brake manufacturing. They rely on outsourcing for that like most other car companies including Ferrari.
FYI, it is generally accepted that AP Racing and Alcon are at the top of the pyramid when it comes to brake design. I know some people that have removed Brembo brakes on their race cars and replaced them by AP Racing components.
Now this said I think all three of those brands make excellent brake components and anyone using any of theses on any car including their Audis would see a major difference. You can have a much better caliper design, a much bigger rotor and keep the weight down to help alleviate unsprung weight.

The main concern would be how come audi cannot built a 3000lbs car like subaru
:-p. stock b7 a4 brakes are fine. Use that money saving to put more aluminum parts to reduce the fat pig's weight.

Luxury car vs economy car. I like renting Subarus. They make good rentals. But I sure
wouldn't want to own one given how they age - tinny on par with my 80's Alfa - even the 90's Alfa is better built! ;-)

Could not ask for better brakes for my Audi!
