Autobahn: Would I still get an instructor if I signed up for the Monday only 1 day?

It is, but I remember in the past my instructor had a new student for a Monday only.
I know I would be fine on my own, but it wouldn't hurt having someone else in the car.

General rule of thumb for an ADD is if you think you need an instructor...
It might not be the event for you. Of course we do have a great group of instructors who are anxious to help and if available would probably be willing to right seat you. But we generally do not assign an instructor to our advanced students unless it is someone who has not run with our group before and we need to do a check ride to confirm they are appropriately classed.
