So for track days running (in summer) 100% water would increase cooling...
is there a downside to this? I don't see people swapping out their 50/50 mixes for 100% water, then swapping back after events. Is there a reason?

What makes you think 100% water is better...
...than a water/anti-freeze mix ?
The Glycol mixes lower the freezing point, and also raises the boiling point. And...of course...it keeps all the seals in the system lubed.
Don't bother. Dead end road here.

100% water has better heat transfer properties, the anti-freeze is just to keep the freezing point..
higher. That is why some people will recommend 70/30 water/anti-freeze mixture in summer.

the only reason
racers (m/c) use 100% water is due to slipperiness of anything else + danger of leaking on a track (imagine two wheels on track and one not having traction- yikes). waterwetter/engine ICe has higher boiling point than 100% water...
