So I received my VAG COM cable tonight and did the following mods...
1. Operate Windows and Sunroof with Remote
2. Video in motion
3. LEDs at full brightness with parking lights
4. Emergency brake flashing lights
5. Keep LED DRL’s on with turn signal
6. Needle sweep
7. Euro parking light

The LED's do not "wink" at night when the headlights are on so that was the default behavior in your video. The LED's only "wink" during the day when it's just the DRL's active. Before I got my own VCDS cable, I thought I got the winking turned off and thought I confirmed it with my own eyes (while the headlights were on). Later, while driving around during the day, I realized that my DRL's were still winking!
If you're considering changing the intensity of the LED's for driving around at night, I would recommend 10%. The default on our Q5 was 7% and turning it up to 10% makes it stand out a little more without making them obnoxiously bright. =)

I've done almost everything that you've done, just don't know how to keep the LED's at full brightness and how to activate the parking light feature - care to share?

Keep LED's at Full Brightness with Parking Lights
This will stop the LED's from dimming when the parking lights are turned on.
[09 – Cent. Elect.]
[Coding - 07] -> [Long Coding Helper] -> Byte 3: Bit 2 - Change 0 to 1
Enable Euro Parking Lights.
[09 – Cent. Elect.]
[Coding - 07] -> Long Coding Helper -> Byte 9 Bit 0 - Change Bit 0 to 1 (1 = active)
Poke around those two sites and you may find others that are interesting for you. =)

VIM using VAG COM? (i.e. how to pull out the unit,
how/what to connect using HEX_CAN cable...etc)
I'm going to do it by myself as you did because
I haven't found anybody around here in Nashville.

Regarding your demonstration of the "Keep LED DRL's on with turn signal" mod, you need to have the headlights OFF to confirm that it works. =)

This is the closes that I'll get to owning a RS model:
"Change radio Concert/Symphony splashscreen: According to capvag at A5OC.com (http://www.a5oc.com/forums/vag-com-change-t10568p3.html) changing in module 56 - Radio byte 12, setting bit 0 from 0 to 1 results in an "S5" logo on the splashscreen (the startup screen on the radio), setting bit 1 from 0 to 1, results in an "RS" splashscreen. Setting both bits 0 and 1 from 0 to 1 results in an "S" logo."
