Opposite feeling here. We have a 2.0. Its been in service for the past few days and we have a brand new 2019 3.0 loaner with only 900 miles on it. Seriously not impressed. Its a little quieter, but I don't feel like the performance is much better. Definitely not $6,000 better!
Besides, we live in DC and you really can't go faster than 35 MPH ever. =p We really only take her out of DC on the weekends. Had the 3.0 going to Annapolis and back over the weekend. The one thing I have a little regret over is not getting Driver Assist. But then again, another calculated decision since we don't leave the city too often.

I think the 3.0 is very refined and the power is there when you put the pedal down. Otherwise it feels pretty average.
One of the biggest things I’ve noticed is the ZF feels nearly identical to our Grand Cherokee w/Hemi. The ZF in the X5 feels nothing like the other two. It’s sharper always, bangs the shifts in Sport+. I think that’s a lot why the Q seems a bit more relaxed, but it’s tricking you still hauling *** in a more buttoned up fashion. I’m coming to love it

Trying driving Q7 2.0 up and down constant differentiating terrain, the 2.0 will reallllly struggle
