what's correct offset for 19x8 Iforged Aero to fit on B5 S4?

true, but make sure if you have plans for brakes that you can clear them typically custom offset can
clear more Stoptech and Brembos, but I've heard people having problem clear wheels with ECS stg3 or 4 with Porsche Cayen caliper that is huge 6 piston. Again it depend on where you are going with it so you don't end up getting another set to clear brakes later.

MB center bore is different from Audi, even though PCD (bolt pattern) is common and offsets ...
... usually very similar. Just something to keep in mind. Plenty of people running MB applications on Audis, so should be okay.
As for 19x8 alloys with ET35 ... they should theoretically work, although it really depends on the spoke design.
