I've been using 0W-40 and 5W-30.

0w40 in the Audis and VW... 5w30 in the Jeep

Default "503.01" VW approved, for turbo's with 200bhp+ (i.e. M1 0W-40 euro - Castrol 0W-30 euro) ...

Alternatively: I like the 5w40 M1 turbo truck diesel (aka re-labled "Delvac 1") -- but my 1.8T did not seem to like it with am start-ups (..as much as a 0w).

You just want an oil that is thick enough to protect it (too thick and it will not be running as effeciently)... 503.1 approval is rated for a ridiculous amount of mileage (like ~14k IIRC)... I wouldn't push any oil that far, however.
-an oil that only has a "502" VW approval (i.e. 5w40 castrol syntec) would not be ideal for intervals over 5k miles (..but otherwise is OK, IMO).

0w vs 10w...does it get thicker as the number gets higher?

Yes. And with multi-weight oil, first number is cold weight and second number is hot weight.

Default 0w-30 will generally be thicker at operating temp than a 10w30 ..that is why

some use a 5w40 as an alternative to 0w30.. both will generally offer similar protection at operating temp (..but the 0w will protect the engine sooner than a 5w at start-up, being that the 0w is more "fluid").
