What is the correct engine oil temp?

i drive a 98 2.8 really hard at times. When outside air temperature is in 90's and im driving 85 mph, my oil temp gets up to around 235- 240. This seems hot to me IMHO. I normaly use M1 5w-40 syn. I am curious what other drivers have observed....
