With an OCK, and car sitting for a week unused found the oil to be down 1/2 a quart
haven't checked it since it changed over 2k miles ago with the engine was out, so it always could have been low. However is there any chance this would be an inaccurate reading due to the car sitting unused and the OCK.
I'm understand this is probably a dumb question, but I've had cars in the past that have given inaccurate readings due to being warm or cold.

#1: check oil more often than every 2k, #2: oil expands when hot so the more oil in the system, the
larger the variation between hot and cold. The only way the OCK would confuse the dipstick is if it is located above the end of the dipstick, but I wouldn't think that is even possible.
Check your oil more often and always do it with engine at full operating temp and on a level surface.

it adds ~1qt extra capacity, though on subsequent oil changes i haven't had to add
7.9 (6.9 orig + 1 OCK) qts. i think not all of the oil in the cooler core drains. the 2 times since install of the OCK i've used about 7.5 qts.
