I bought a new/used switch blade key for my 01 S8...
which has the immobilizer function. Can Vag-Com be used to reset the key remote (immobiler function) to work once I have the key cut for my car, or must I have the dealer do it?

In general VAG-COM can do that, however you do need the SKC for your car...
