My 30k service not what I expected!
I've had my A4 for almost 7 years but only have 30k miles on it. I took it to my local shop for the 30k service. Of course they did an oil and filter change, but they found a few other items that needed attending to. I needed a new engine air filter, cabin air filter and a brake system flush and fill. All-in, it was over $750. They showed me pics of everything they changed so I'm confident that they were honest. They always have been. They did my thermostat/water pump replacement. They also tightened the hose to the turbo when my car was losing power and didn't charge me.
I have noticed my gas mileage is now up almost 1 mpg. I recently had new Michelin Pilot Sport AS tires installed, so the car drives like new. Hoping no major maintenance is in my future. I love the car enough to pay the high costs of keeping it in good working order.
My uncle owned a car lot and always said "miles don't hurt a car, age hurts a car". Seems he was right.

Ok, Im a newbi audi owner, but not newbie to dealership work. This is the pattern at the audi dealership I take my 18 A4 to as well. Free oil change,....... and 2K worth of stuff they 'recommend changing". Audis not alone. I took my Dodge truck to a dealership once, they identitified like 15 parts I needed repair/work, aside from the thing that was broke....I kept that list, 5 years later when I sold ot, 14 of the 15 things were still operable. I like to keep this car in good shape, but yeah, somethings I just wait till they break

Nothing you mentioned is out of the ordinary, it's all good practice and pretty typical maintenance items. I agree with Stubby tho, an engine/cabin air filter are 30 minute jobs, even to a complete novice. But if you're happy with them and trust them, I think they did you right. Also worth mentioning, your 40K maintenance will be considerably more expensive. Spark plugs/DSG fluid change.

But, following the Audicare plan as intended, dseag2 would be up to the "70k" service interval already after 7 annual services. Will they even let you delay the intervals by over 2x or will the plan expire without use after hitting some calendar date?

No, each service under Audicare has a time/miles expiration. 7 years/84 months is the expiration for the 60k mile service, with all previous ones expired. It has 30K minimum, so OP probably only qualified for buying the 50k/60k package, squeezing one service in with over 30K miles and under 84 months. But would have only been able to use the one service, at $1199.
The items listed all sound like things that I would expect to be needed. 7 years for a brake fluid change is long past any recommended interval - fluid absorbs water over time, not with mileage, so that's a concern. The cabin filter is beyond the recommended mileage. The engine filter is early, but if photos showed it was needed, it is what it is. Both filters can be done by yourself - engine filter is easy, cabin filter is a bit of a PITA. But people vary in desire to work on a car. I've changed brake fluid, but I don't think I'd want a mechanical newbie to be tackling that, given the downside.
OP, if $750 for a full service caused concerns, you need to brace yourself for the 40K service with DSG fluid change. Without Audicare, I think it's $1500 at my local dealer.

With only 30k miles on the car in 7 years it will be a couple of years before I need the 40k service, but thanks for the heads up. When I was working, I worked from home or traveled and my A4 sat at the airport. That is the reason for the low mileage. Now I drive it every day so I'm actually putting on more miles, but still maybe 5k per year.
I have never been mechanically inclined so I haven't worked on any of my cars. I know it costs more but I rely on the shop for that.
